   La stagionatura di questo formaggio piemontese è di 80 giorni e può essere commercializzato solo alla terza domenica di settembre, in occasione della festa di "Poggio Oddone" a Perosa Argentina.

 The fortress departed from the highest point (of the valley to Fort    1800 meters above sea level) in 1728 at the behest of Vittorio Amedeo II. It took 122 years because the construction was completed reaching the lowest point, near today's passage of the state (Forte Carlo Alberto by the name of the king who completed the construction in 1850). 
 
  The fort was built to defend the new kingdom of Savoy in Piedmont by the French raids even though he was never directly involved in the battles. It was used mainly as a prison camp. 
 
  In the Second World War saw several clashes between supporters of the Piedmont Chisone German army. It was finally abandoned by the Italian army in the late '40s.

350 gr. of superfine rice,
200 gr. of dried beans,
350 gr. white cabbage (cabbage),
1 carrot 1 / 2 medium onion, 2 stalks of celery

80 grammi di pancetta tritata fine,
25 grammi di burro,
1 salam d'la duja(conservato nello strutto),
